OP, when you say you want to make minimal ambient music, can you be a little more specific? Like artists you like, moods or timbres you’re drawn to, etc.
I’m sort of thinking that if you don’t have anything too concrete in mind (which can be a real good thing imo!), and especially if you have less experience with synthesis, something like Plaits could be a good choice.
You’d have more than enough sounds and synthesis types to work with to make music you enjoy, and it’d be a good way to learn what you like for sound sources in the future.
